How can you use your BBQ right from the outset to beat the standard “chips and dips” fare most people start with?
An recipe I’ve found hugely successful is my BBQ Nachos. This is inexpensive, easy, yummy, very social, and takes your starter to a whole new level. This also follows my standard principles for cooking – essentially: The simpler the recipe, the better for all concerned.
- Take one of those disposable foil trays
- Empty about 1/2 a large bag of Doritos (I prefer Cheese Supreme) across the bottom
- Sprinkle (pretty much cover) a good portion of grated cheddar cheese (shredded tasty) over the Doritos
- Drizzle a good portion of Sweet Chilli Sauce over the cheese
- Repeat with another layer of Doritos, Cheese and Sauce
- Pop in the BBQ with the lid closed once the barbie is at heat for about 5 mins or until the cheese has melted.
- Take about 250g of Sour Cream and dollop on the top.
You can eat this with your fingers, but serving with napkins and forks is a great idea.
If you have kids, or people sensitive to even the spiciness of Sweet Chilli Sauce, put another one together with BBQ Sauce as an alternative.
Seriously this will take you about 5 mins to put together, and is a great social starter to share whilst you’re cooking the perfect steak and snags ![]()
